Recipe Tuesday: Porcupine Balls

Porcupine Balls


1 lb. ground beef

1/2 c. uncooked rice (I use Minute Rice)

1/2 c. water

1/3 c. onion, chopped

1 tsp. salt

1/2 tsp. celery salt

1/8 tsp. garlic powder

1/8 tsp. ground black pepper

1 15 oz. can tomato sauce

1 c. water

2 tsp. Worcestershire sauce


1. Pre-heat oven to 350°.

2. Mix ground beef, rice, 1/2 c. water, onion, salt, celery salt, garlic powder, and pepper.

3. Form mixture into 6 or 8 balls.

4. Place into baking pan.

5. Mix together tomato sauce, 1 c. water, and Worcestershire sauce.

6. Pour sauce over meatballs.

7. Cover tightly with foil.

8. Bake for 45 minutes.

9. Remove foil.

10. Bake for an additional 15 – 20 minutes.

11. Serve with choice of vegetables.

12. Enjoy!
